Make your tuna salad as usual or you can really spark those taste buds mix  your tuna salad with cream cheese. You know how cream cheese and onion go so well on celery. Well it is absolutely yummy for all those cream cheese lovers!! Healthy too!

 Topped with Peanutbutter, Raisins & Granola

Rice cakes are so much fun! There are many varieties now and that just makes your healthy snacks more exciting! Here I used the peanut-butter / granola with raisins and chocolate chips on the traditional unsalted plain rice cake. You can make it more of a special treat if you use the caramel cakes. They are supper delicious! I will post more topping ideas as I make them . ENJOY!

Whole Grain Crackers with Salsa & Creamcheese topping

Enjoy your favorite whole grain crackers with onion chive whipped creamcheese, topped with fresh salsa

YUMMY AND HEALTHY!

Yummy Mango Peach Salsa

 3 tomatoes 

1 cucumber

1 small red onion

1 mango

1 white peach

1/4 cup fresh calantro

2 Tbls fresh lime juice

salt and pepper to taste

This is a mild recipe. If you would like a 

little spice, add a jalapeno.

Fat Bombs

Fat bombs are such a delicious and healthy snack for Low carb eating and also you will find yourself fighting the kids for them!

 Ok .. Lets get creative and use your imagination for making lots of variety !

Start with nut  & seed butters. Combine several nut & seed butters in a bowl or just one kind if you like. I would start with 5-8 tablespoons of any combination of: 

Peanut butter, almond butter, pecan butter, walnut butter, sunflower seed butter, cashew butter, sesame seed butter ... Sometimes I stir in  1 TBS powdered peanut butter for consistency. 

Next you will stir in your favorite sweetener. Approximate 1 to 2 tablespoons  confectionery swerve..{ Moms you may want to use Agave or honey.}Add half cup of any seeds or chopped nuts. If you like a crisp to your bite, you can add a hand full brown rice crispies or quinoa crispies. Stir well with fork. Roll into balls about the size of a cotton ball.   I love to dunk mine into Lily's dark chocolate. Sometimes I put a small amount of melted chocolate on bottom of candy paper then place fat bomb on so that it sticks to it. Spoon or drizzle more of the melted chocolate on top. Pop them in a pan with wax paper on bottom and freeze.YUMMY! 

If you do not want to coat with chocolate, You also can add mini chocolate chips to nut butter batter. They are amazing that way too! I have made some with cream cheese and coconut & mini chocolate chips.  Some with added chopped nuts , some without.
