Low Carb Chicken            noodle soup

One whole chicken simmered on medium heat until cooked through.( Or you may use chicken breast and organic chicken stock and broth. I always add organic chicken stock and broths to my base in either case.) cut up two stalks celery with leaves, 4 crushed garlic cloves, one large chopped onion. Add to your chicken base.

Remove chicken when cooked and set aside. Add one tablespoon apple cider vinegar, one tablespoon butter, and one tablespoon olive oil to broth.

Add chopped veggies of choice, carrots, tomatoes,zucchini , if using baby spinach or baby kale, add last.

cut up chicken and put back into your pot

Yes ... Angel Hair tofu. It is so awesome with                                                                     amazing health benefits and low carb!

You will love it more and won't believe its

not pasta!  I found this at Shoprite. Add to 

your pot of soup and done in two mins.

                                                                                                                                   

Low Carb Manacotti

At last! Yummy low- carb manacotti

Prepare 8x8 baking dish coating with fresh crushed tomatoes, garlic and sauce.

Shells:

6 eggs beaten well

6 tablespoons Ricotta cheese

3 tablespoons cream cheese (let get room temp.)

Beat with whisk until smoothe

Coat medium non stick pan with light olive oil. Heat pan, Pour aproximately 1/2 cup egg mixture in pan making a crepe. cook until it can be turned over (few seconds) Place each crepe on a wax paper lined cookie sheet.

Filling:

2 cups ricotta cheese

1/2 cup romano cheese

2 cups shredded mozzarella, sharp cheddar & provolone cheese

cracked pepper (optional), oregano, parsley

 

mix together, fill and fold crepes into manacotti shapes.  Top with sauce and extra romano cheese 

Bake on 350 for 20-25 mins. YUM

Yield: 3-4 medium size manacotti, 6 small manacotti

Low Carb light as a feather Pumpkin Pancakes

2 Tbs pumpkin

1 tsp pumpkin pie spice

1 tsp sweetener

2 Tbs cream cheese soften

splash of vanilla

1 Tbs heavy cream or allmond milk

1 large egg seperated

2 Tbs almond flour(Not almond meal)

1/2 baking powder

dash salt

In a seperate bowl, beat eggwhites until foamy and starts to get thick then set aside. you will fold these in last.

Put all wet ingredients in bowl with egg yolk. Add dry ingredients stirring with whisk. Then fold your egg whites in batter until mixed well. Note if batter seems too thick, you may add a little more milk or cream. Some pumpkin is thicker in consistancy than others especially if using can pumpkin. Pour batter in hot buttered pan. Wait until bubbles form then turn over. They should be nice and brown. You can use sugar free syrup, or whipped cream dusted with pumpkin pie spice. Makes about 4-5 medium sized pancakes.  Enjoy

Low Carb Chicken wrap

Two wraps (I use carb balance by mission)

Brush both wraps on both sides with olive oil or butter

place in nonstick frying pan to slightly brown on one side. Put aside.

coat two chicken boneless chicken breast in a mixture of balsamic vinaigrette dressing with 1/2 teaspoon  kitchen bouquet browning sauce, one beaten egg

 

 

Cut chicken into strips about 1/4 inch wide.  Now coat  marinated chicken pieces in a mixture of  1 cup almond meal, tsp garlic powder, 1 tbs grated cheese. 

Slowly fry in olive oil until brown. 

In separate pan, stir-fry baby greens, peppers, garlic and onion. 

Fill wraps on uncooked side, so the fried part is folded like the picture shows. Sprinkle with shredded provolone cheese, put on pan with parchment paper and bake until cheese melted. 375 for few mins.

You can use any cheeses and veggies you like. Sometimes I make it with baby greens or broccoli rabe.  The carb balance wraps are about 6 carbs each.

With veggies added , one wrap filled is aproximately 

8 carbs.

Parmesian Cheese Chips... A quick crispy snack So easy and delicious

Found this golden snack on line. So... this is not my original but just had to put here as a super easy favorite of mine!

Place a small amount of shredded Parmesian cheese on parchment paper. Bake for 30 seconds. Let cool

for about 30 seconds. And YUM YUM Delicious. 0 CARBS !! Make sure you look at your cheese containers . Some have 1 carb. It depends on milk content and aged cheese.

Making Low CarbMeatballs 101

Making Low carb meatballs is super easy and delicious!

1pound ground meat, Beef, chicken, turkey, pork. whatever you choose it makes a great LCM

1 egg

1 cup ricotta cheese

1/2 cup grated cheese of your choice, Parmasian is my favorite

2 cups fine almond flour

Add desired amount of granulated garlic, fresh parsley, Italian seasonings that you would add to your regular meatballs. 

Form meatballs and slowly simmer in olive oil until browned on each side.

These are so moist and delicious. You can add sauce if you like or eat plain.
