Bridal Shower Chicken Salad
2 whole chicken breast cooked with skins, cooled completely then skinned.
3 stalks celery chopped
2 Granny Smith apples chopped in small pieces.
1 juiced lime or lemon (pour juice over apples for added flavor and to keep apples from browning.
1tsp celery seed
1 tbsp cracked pepper
2 tbsp dried minced onion flakes
3 tbs mustard or 1tsp dry mustard
1/4 cup milk (i use almond milk)
1 1/2 cup plain yogurt
1 cup mayo
Mix together sugar, yogurt,mayo,milk. Stir in seasonings, Pour over chicken pieces and then add apples. Fold in dressing covering all chicken pieces. You may want to add chopped nuts and dried cranberries.
Goes great with Fresh fruit, green salad, sliced tomatoes, chips, croissants or Italian rolls. Enjoy!
Low Carb omitting roll
Salad for Supper
1/2 head chopped iceburg lettuce
1 small bunch romaine lettuce cut into small pieces
aproximately 5 cups baby spinnach and baby kale mxed
4 grilled boneless chicken breasts or chicken cutlets sliced into strips
1/2 lb uncured bacon cooked until crispy
1 avacado cut into small bite sized pieces
40z sharp cheddar cheese slices
1/4 cup feta cheese
1 green apple sliced thin
1 tomatoe chopped in small bite sized pieces
This salad can be made in so many different ways. You can add hard boiled eggs, nuts, seeds ect. Enjoy!
Cream of Broccoli Soup
1 stick butter
1 bunch fresh broccoli chopped or 1 lb frozen broccoli
1 small onion
1 bunch broccoli florets or 1 lb frozen florets
1/2 to 1/3 cup flour
1 to 2 large red skin potatoes sliced very thin
32 ounces chicken broth
1 to 2 carrots sliced very thin
1 cup light cream
1 cup grated Parmesan cheese
1 cup whole milk
In Heavy soup pot, simmer onion in butter. ( take off burner while you add the flour.) Gradually stir in flour until it looks like a thick paste. You may add more if it needs to be a little thicker. Slowly add chicken broth stirring constantly with a whisk until smooth. Now add your cream and milk still stirring. Add in remaining ingredients and cook on low to med heat until tender. Stir often. Add pepper to taste.
Chicken Tortellini Soup
2 whole chicken breast cooked slowly with skins.
Take out of water and cool on plate.Keep your broth. cut chicken in small bite sized pieces and add to your soup last.
In large soup pot, simmer in 1/4 cup olive oil ,one whole onion chopped, 2 stalks celery chopped,4 cloves fresh garlic chopped or you can use 2 tbs. minced garlic.
Add your broth you reserved and also 4 ( 32 oz ) cartons chicken broth
Peel and slice 8-10 carrots
1 large bag fresh baby spinach
1 lb 4 cheese tortellini in clear package semi fresh
Simmer everything until tender then add your chicken pieces and 1 cup grated cheese
Pepper to taste.
Whats for dinner tonight?
One in a half lbs flank steak, or top round steak sliced thin so that you can roll it. If too thick, pound it. Marinate in white wine , fresh garlic & olive oil for several hours.
Brush lightly with kitchen bouquet or gravy master. Put in refrigerator until your ready to cook. when your ready to cook, flour your meat strips on both sides.
Slice mushrooms and cook before meat then add later when braciole is almost done.
4 to 6 hard boiled eggs
1 cup seasoned bread crumbs
1/2 cup sharp Parmesan cheese
1/4 tsp pepper
1/4 cup white wine or Marsala
1 tbs butter
Mix bread crumbs, cheese & pepper together in bowl pour your wine & butter on breadcrumb mixture coating it well so it looks like semi wet sand.
Take one slice at a time of your floured meat. spread it out. Top it with bread crumb mixture first. (approx. 1 tbs)
Now slice egg very thin and place across on top of bread crumb mixture.
Roll and keep it together with a toothpick so it stays in place. Repeat.
Heat olive oil in non stick pan generously coating entire bottom. Fry your rolled braciole on all sides slowly on med. heat.
Make a thin gravy using 2/3 cup beef broth and a small amount of cornstarch
(approximately 2 tsp.) stir cornstarch in cold beef broth. Set aside
when meat is brown on all sides, add your mushrooms and gradually pour 1/2 cup white wine and gravy over. put lid on and turn down on low to simmer.
I serve this with roasted veggies, Risotto, salad & biscuits Yum Yum!
Breaded Chicken Breast
Topped w/Sharp Provolone cheese & Baby Arugula
6 boneless/ skinless chicken breast
Marinate chicken breast in white wine or Italian dressing
Coat pieces with flour then dip each piece in egg, coating well.
Now coat all sides with Italian seasoned breadcrumbs . For extra batter , repeat these steps.
Heat olive oil in bottom of frying pan enough for the chicken to be covered half way up sides , but not completely covering the chicken. Brown on both sides cooking slowly on med. heat to prevent from spitting. Turn over when brown. Drain almost all oil except approximately 1 tablespoon. Saute arugula with one clove crushed garlic. I used a small bag. You can also add mushrooms. I would have added them except I did not have any left on hand. Now add back your chicken breast in the pan and top with sharp provolone cheese. Serve with your favorite pasta dish. Yummy!
