Bridal Shower Chicken Salad

Dear moms and daughters, you are probably wondering why I call this recipe "Bridal Shower chicken salad." I invented this recipe mostly for my daughter, Rachel. She is not much of a mayo person.(Of course I was all set to serve chicken salad anyway for her shower) So here it goes... I hope you enjoy these variations to our favorite recipe not just for showers but also for a great "COOL" meal on a hot summer evening.

2 whole chicken breast cooked with skins, cooled completely then skinned

3 stalks celery chopped

2 Granny Smith apples chopped in small pieces

1 juiced limes or lemons (pour juiced lime over apples for added flavor and to keep apples from browning)

1 tsp celery seed

1 tbsp cracked pepper

2 tbsp dried minced onion flakes

3 tbsp sugar or honey or (sugar substitute)

1 tbsp mustard or 1 tsp dry mustard

1/4 cup milk (any milk can be substituted. I use almond milk)

1 1/2 cup plain yogurt ( I use triple zero)

1 cup mayo

1 tbs vinegar

Mix together,sugar, yogurt, mayo,milk. stir in seasonings. Pour over chicken pieces and then add apples with lime juice last. Fold dressing covering all chicken. You may want to add chopped nuts and dried cranberries.

Great menu ideas include: Fresh fruit tray, green salad, sliced tomatoes, chips, croissants or Italian rolls. ENJOY!!
