1 stick butter 1 bunch broccoli chopped or 1 lb frozen broccoli

1 small onion chopped 1 bunch broccoli florets or 1 lb frozen broccoli florets

1/2 to 2/3 cup flour 1 to 2 large red skin potatoes sliced very thin

32 ounces chicken broth 1 or 2 carrots sliced very thin

1 cup light cream 1 cup grated Parmesan cheese

1 cup whole milk

In heavy soup pot, simmer onion in butter.( Take pot off of burner while you add the flour.) Gradually stir in flour until it looks like a thick paste.You may add more if it needs to be a little thicker. Slowly add chicken broth stirring constantly with a whisk until smooth. Now add your cream and milk still stirring. Add in remaining ingredients and cook on low to med heat until tender. Stir often. Add pepper to taste.

One of the nicest things about this soup is the base. It will make a wonderful Christmas afternoon meal with a hot loaf of Italian bread and butter! You can use the base which is the first 6 ingredients and make So many different delicious soups. Cream of Broccoli is just one of my popular ones. Cream of Potato, Cream of Asparagus & Cream of chicken. Sometimes I put all of those together in one pot. You can also make clam chowder and it is absolutely yummy!
