LUSCIOUS LEMON CUSTARD PIE OR TARTS


CRUST

1 stick butter plus 1 tbs.

1 1/2 cups flour

1/2 tsp salt

1/4 cup sugar

3 to 4 tbsp. milk (additional may be used if needed)

1 tsp. vanilla added with milk

In large bowl, sift together flour, salt & sugar. cut your butter into flour mixture so that your flour is broken up.( You may add additional flour only if needed.)Add milk mixture one tablespoon at a time spreading it over the flour mixture until all is moist enough to make a crust. Flour hands and mix together using your hands now for my secret: HINT: Ladies, I do not roll pie crust. I put the flour mixture in the pie plate and press it around the sides and bottom.. poke holes with fork on bottom and sides for air flow. Pre- bake about 15 mins or until golden brown then let it cool before pouring in filling.

FILLING:

4 egg yolks

1 can sweetened condensed milk

1/4 cup evaporated milk

1/4 cup light cream

2 juiced lemons

lemon zest of both lemons

dash salt

Mix all ingredients together in heavy sauce pan. Stir with whisk constantly on low heat. Gradually turn heat to med-med-high still stirring until comes to slow boil. Take off heat and prepare meringue immediately.

MERINGUE TOPPING:

4 egg whites room temp.

1/2 tsp cream of tartar

Beat until foamy

Add 1/4 cup white fine granulated sugar with 1/2 tsp cornstarch. Add mixture a little at a time while beating on high until white and shiny.

Pour hot lemon filling into cooled baked pie crust. Cover with meringue immediately on top of pie touching all sides of crust so that it will seal. Bake about 15 mins. or until meringue is golden brown. Let completely cool at room temp. Then refrigerate. YUM!

Dear Moms & Daughters,

I'm so sorry that it has taken me so long to get this recipe to you. I have been trying to work with it so that it is not too tart and yet, tart enough. So If you make it and you don't like your tarts too strong, I would suggest to eliminate one juiced lemon and the zest. You could also substitute more cream for the amount the lemon should give you. (Approximately 1/4-1/3 cup) If any of you gives this a try, please let me know what you did and how it worked! Until then... I will be working on more goodies to add to my website!
