Greetings to all my friends on this beautiful Tuesday,
In some ways I look back and realize that I have taken my childhood for granted.You know the old saying, "You don't know what "Good" you had when you had it? I guess that's how it goes; well it gets to the point of what i want to share... One of those"goods" that I have not appreciated, is the fresh vegetables that my father, as a vegetable farmer worked so hard for as a living, to supply not only for our family's needs, but also for others to enjoy! One of those foods is asparagus...
I thought since I have been buying asparagus everywhere, and fixing it just about everyday, I would share some neat things with you from my studies about the nutrition found in those beautiful green spears. God is so awesome! He has given us so many vitamins and nutrients in the foods He has created for us to enjoy that we can get healthy benefits from. Even though I study the nutritional value of foods, herbs, enzymes, amino acids, antioxidants.... It is still fascinating to me as I prepare them, what foods actually do for your body.. I also enjoy researching what foods do to hurt your body as well, but as you can see, I will avoid the topic of "Sugar" and its damaging potential this time. I really haven't conquered that one yet. I will be honest, I believe everything should be eaten in moderation... Loving Ice Cream, Chocolate & use your imagination for the rest, I avoid abstaining from the don'ts more than taking advantage of the do's.. So ... Lets focus on Asparagus...
High in antioxidants: Warning do not under cook or over cook. The vitamins are essential for fighting free radicals that cause cancer.They also build your immune system.
High in amino acids: This helps us to flush excess water that we retain. Very good for preventing UTI, and also great support for the kidneys and liver.
Healing to your intestines protecting good flora.
High in folic acid, a, c, e, k, & b-6
So... Munch on lots of asparagus this season and enjoy it so many ways!
Asparagus & Egg sandwiches, Cream of Asparagus soup, Roasted alone or with other veggies, Grilled with chicken adding it to the top of your salad ect...My friend Cathy uses olive oil, panko and lemon zest..(Gotta try that one Cathy.) Also...last but not least, if you put your bunch in a tall glass with water, it looks so pretty as the centerpiece on your kitchen table! Hope this post was helpful.
