Cannoli dip and or filling is a treat all low carbers can enjoy! Mini cannoili shells are only about 4 carbs. Depending on the sweetener you use, you can enjoy this amazing dessert for approximately 6 carbs or less. Read your label on the packages to find the equivalent measurements.
12 oz Whole milk Ricotta cheese ( strained ) unless you are using Maggio Ricotta cheese. This brand does not require straining.
4 oz whipped cream cheese or whipped mascarpone cheese
1/2 cup heavy cream
1 cup confectionery sugar or 1/2 cup swerve confectionery sweetener(look on the container of your sweetener for equivalency to sugar)
1 Tbs cinnamon
1 Tbs vanilla extract
Directions:
1) Strain whole milk ricotta cheese to rid of excess water.
2) Add whipped cream cheese to ricotta cheese or if using mascarpone cheese, using a whisk attachment, whip until fluffy then add to ricotta cheese.
3) Whip in 1/2 of confectionery sugar into cheese mixture
4) Using your same whisk attachment, whip your heavy cream until thick but do not make butter :) adding other 1/2 of confection sugar, cinnamon and vanilla
5)fold the heavy cream once whipped into the cheese mixture
Place in decorative bowl, add shaved dark chocolate, chill until served!
