Cauliflower/ Zucchini Pizza Crust....Pizza


Okay everyone this is my experiment. There are many recipes out there for this amazing pizza. I have found both zucchini and cauliflower recipes and they are all very good! This was just an experiment that I did tonight for fun. I combined both cauliflower and zucchini in this recipe. This size is for two people. Approximately 8 x 10"

2 cups riced cauliflower

1 cup riced zucchini

combine & steam just for a few mins. you do not want it too done. If your using the microwave, cook covered for approximately 3 mins.

Let cool for about 5 mins. In a strainer, lay cheese cloth down and fill it with mixture. Gather all the ends to carefully cover and squeeze all of the water out that you possibly can.

Put combined cauliflower and zucchini mixture in bowl, now add remaining ingredients of:

1 egg

1/4 cup of almond meal or coconut flour

1 tablespoon granulated garlic

8 oz shredded cheese. I mix it up using provolone, mozzarella, sharp and Romano/Parm

Mix well. Now Place on a parchment paper lined pan, patting it into a rectangle. Bake 375 for about 20 mins or until brown. The longer you keep it in the oven the browner and the crispier. Sometimes I turn it over and cook a while so that it has more of a crunch to it.

When crust is ready, top with your favorite cheeses, sauce, meat and veggies.

Put back in oven until cheeses are melted well.

*Note that I always pre- cook my veggies before adding them to my pizza.
