Low Carb Coconut Shortbread Cookies


This cookie recipe really looks and tastes like a "no no" But YES YOU CAN!!

1/4 cup coconut oil soften

1/4 cup butter soften

1/4 cup swerve confection sugar (walmart carries swerve)

1/4 unsweetened coconut shredded fine

8 drops liquid stevia

1/2 tsp. vanilla

few drops coconut flavoring (optional

1 small square dark chocolate (i use 85% cacio and shave it into ingredients

1 & 3/4 cups Bobs Red Mill Almond flour extra fine (BJs carries it)

Mix coconut oil, butter, sugar, swerve, stevia, coconut & vanilla . shave your chocolate square into batter. Slowly add almond flour. Make into balls, On parchment lined cookie sheet, flatten dough a little with your hand. Bake at 350 for 10-12 mins or until golden brown. Leave cookies on tray for several minutes.

When almost cool, dust with swerve confection sugar. Enjoy!!! Less than one

carb per cookie!
