Low Carb Cheesecake Tarts

This recipe was submitted by one the best bakers I know. My sister Debbie Curtis

She has found an incredible way to put together these tarts using low carb ingredients

making this dessert feeling like a "No No" on your special diet! SO if your out there

needing something incredibly delicious GUILT FREE.. This one is for you! Your

taste-buds will sure to be dancing with delight!

ENJOY!

Sugar Free / Grain Free Vanilla wafers (Sugar free Mom)

Ingredients:

1/2 cups coconut flour

1/2 cup swerve sweetener granulated or other favorite sweetener

1/2 tsp baking powder

1/2 tsp salt

2 egg yolks

2 tsp vanilla extract

1/2 tsp vanilla liquid stevia

Instructions:

1.) Add first 4 ingredients to mixer and blend on low to combine.

2.)Place remaining ingredients into the mixer and blend on medium speed until thoroughly incorporated.

3.) Place a large piece of parchment paper or plastic wrap on counter, form dough into the cylinder shape.

4.) Wrap tightly and place in refrigerator for at least 30 mins

5.) Preheat oven 350 degrees

6.)Unwrap dough and slice into approximately 18 cookies

7.)Place them on parchment paper lined cookie sheet

8 Bake 12- 14 mins until golden brown around edges

9) Allow to cool slightly before removing about 10 mins.

10) Enjoy and store in air tight container

TARTS

2 Large bricks cream cheese

1/2 cup swerve or other sweetener of your choice

2 teaspoons vanilla extract

2 eggs beaten smooth

INSTRUCTIONS:

Put cupcake papers in muffin tin. Place a vanilla wafer on bottom of each. Fill 1/2 full of batter. Bake 350 for 10-12 mins. When cool, Top with Berries and Cream. YUM!! A special thank you to Debbie for submitting this Scrumptious recipe. I will make sure she submits many more!!!
