Yummy" light as a feather" Pancakes

This recipe is not low-carb however you can substitute ingredients to lower the carb content. I was in the mood for something a little different for a topping and so this is what I came up with.

Pancake Recipe:

1/2 cup unbleached all purpose flour

1/4 cup almond flour

1/4 cup oat flour

1/4 cup sugar or one tablespoon sugar substitute of your choice.

1/2 teaspoon salt

1 tablespoon baking-powder

Add dry ingredients together and mix with a whisk. Set aside

In separate bowl combine:

1 large egg

1& 1/4 cup milk ( I use evaporated or buttermilk)

2 teaspoons vanilla or 1/2 squeezed lemon with zest

2 tablespoons butter

1 teaspoon oil

Gradually combine dry ingredients to wet ingredients with whisk.

Pour onto hot buttered griddle. wait for bubbles then flip

TOPPING: COCONUT ALMOND

1/2 cup chopped toasted coconut almonds or just plain is fine.

1/2 cup shredded coconut

2 tablespoons butter

In small sauce pan combine chopped allmonds, coconut and butter. stir until butter browns the coconut and nuts. you can add butter if necessary or double for more topping. When browned, add 1/3 cup maple syrup and stir on stove until heated.

Pour over pancakes. It is SOOOO GOOD!
