Blueberry Baked Oatmeal



DESSERT OR BREAKFAST ? That's the question. Okay This is a fun story. My daughter, Danielle made these AMAZING Cherry Oat BARS!! Actually the best I ever had! She sent us home with a few that was devoured by my hubby in a matter of seconds and I confess I did have a few bites. Enjoying a little quarantine pleasures .:) Anyhow I was trying to figure out something different for hubby the other morning. I just could not get the oatmeal bars out of my mind.. So I thought about baked oatmeal . That's not too unhealthy. I thought about blueberries in my freezer I needed to use up. Hmmmmm ; so of course, my taste-buds started talking to me and I came up with this Baked Blueberry Oatmeal that you can have for both breakfast or dessert ; or just a dessert to go with your breakfast. I actually broke some of this in chunks and made it into a yogurt parfait . My daughter, Rachel was making those with big chunks of granola and blueberries the other day and that got my wheels turning for some options here! So I hurried to remember what I had done after making what turned out to be really incredible...A few of my friends asked for the recipe and made it right away.

Cover bottom of 8x8 pan generously with berries. Set aside

1/2 cup butter soften

1/2 cup brown sugar

1/2 cup granulated sugar

1 tsp cinnamon (optional)

1/4 cup milk

1 egg

Mix butter, sugars, cinnamon, milk & egg together with fork. Set aside

In separate bowl, mix together the following...

1 and 1/2 cups old fashioned oats

1/4 cup nuts (optional) I used pecans chopped in big chunks

3/4 cup flour

1/2 tsp baking powder

dash salt

DIRECTIONS:

Gradually add dry ingredients into wet ingredients with fork. It should look like Oatmeal cookie batter. Then Pile on top of berries. Bake for 375 for about 30 mins. or until brown on top and you see berries bubbling. ENJOY!!!
